Almond Coffee

Ingredients:
Peeled and chopped almonds ½ cup
Milk (divided) 4
Rice flour ¼ cup
Sugar ¼ cup

For The Topping:
Ground cinnamon as required
Ground cardamom as required
Toasted slivered almonds as required

Method:
Take 3 cups of milk and blend with almonds and cook on slow flame for 10 minutes with continuous stirring. Add sugar. Dissolve rice flour in remaining 1 cup of milk and add to the almond milk. Cook until you get desired consistency. Serve with the toppings.

Cardamom Twisted Bread

Ingredients For Dough:
Milk, warmed ¾ cup
Active dry yeast 2 ¼ tsp
Egg, room temperature 1 large
Granulated sugar ¼ cup (50 gm)
Salt 1/2 teaspoon
All-purpose flour 3 cups (375 gm)
Unsalted butter 1 cup or 250 gm

For The Filling:
Butter, room temperature 4 tbsp
Brown sugar ½ cup (100 g)
All-purpose flour 2 tbsp
Lemon zest 1 tsp
Cardamom 1 tsp
Salt a pinch

For The Glaze:
Icing sugar 2 cups
Orange juice (or the juice from one orange) ¼ cup

Method:
Mix all the ingredients of the dough and knead into a soft dough. Let it rise until double in size. For filling mix sugar, flour, zest, cardamom and salt. Roll out the dough and spread butter over it. Sprinkle brown sugar mixture over the butter and roll out the dough. Put in a skillet and let it rise for 30 minutes. Bake on 180 for 25 to 30 minutes. Mix the glaze ingredients and pour on the warm bread.

Mexican Khachapuri

Ingredients For the dough:
Salt 1 tsp
Dry active yeast 1 tsp
Granulated sugar 1 tbsp
All-purpose flour 3 ½ cup
Water 1 cup
Milk ½ cup
Olive oil 1 tbsp

Method:
Mix all the ingredients and make a soft dough.

For The Filling:
Eggs 2
Mozzarella cheese ½ cup
Cheddar cheese ½ cup
Onion chopped 1
Crushed garlic 2
Capsicum chopped 1
Tomato chopped 1
Tabasco or hot sauce 2 tsp
Salt Black pepper ½ tsp
Crushed red chilies 1 tsp
Parsley 1 tsp
Olive oil 2 tbsp

To Serve:
Sour cream as required

Method:
Heat oil. Sauté onions. Add garlic. Then add capsicum and tomatoes and all the seasonings. For khachapuri roll out the dough in boat shape. Sprinkle cheddar and mozzarella cheese. Then onion mixture and bake on 180 for 10 minutes. Take it out and break the eggs in the center of puri and again bake for 8 to 10 minutes. Serve with sour cream.

Tiramisu French Toast

Ingredients:
bread loaf or butter cake 1
Brewed coffee ½ cup
Sugar ½ cup
Cream ½ cup
Milk ½ cup
Vanilla essence or powder 1 tsp
Salt a pinch
Eggs, at room temperature 6 large
Cocoa powder 1 tsp
Milk 1 tbsp
Butter or oil for frying

For The Whipped Cream:
whipping cream, cold 1 cup
Confectioners’ sugar ¼ cup
Vanilla essence ½ tsp

For The Chocolate Ganache:
Chocolate, chopped 2 oz (50 gm)
Cream 1/3 cup
Sugar ½ tbsp
Vanilla essence ½ tsp

Method:
Mix together cocoa and 1 tablespoon milk to make a thick paste. In a bowl whisk together eggs, milk, cream, coffee, sugar and vanilla essence. Cut bread loaf in long rectangle shape logs and dip in the milk mixture and shallow fry from all the sides. Beat together whipping cream, sugar and essence until stiff. For the chocolate ganache heat cream add sugar and chocolate and cook until melt. Remove from the stove and add essence. Serve with seasonal fruits.
