Coffee and Spice Crusted Pork Tenderloin, rub recipe by Dr. Alexandra Gutierrez of Washington University

Recipe for the rub:

½ cup of ground coffee

½ cup of vegetable oil

¼ teaspoon thyme

1 teaspoon cumin

1 teaspoon crushed coriander

1 teaspoon chili powder

½ teaspoon salt

¼ teaspoon pepper

425 degrees for 30 minutes
