In this first video in my new series on the DeLonghi Dedica, I’m giving a general overview of the DeLonghi Dedica.
I’m talking specifically about the newer model, the Dedica EC685. Everything I’m saying in this video is more or less the same for the EC680 except for the panarello – the EC680 has a more standard panarello wand.
In the next video I’ll get more in-depth, including a step by step guide to making the very best espresso with this espresso machine.

Terminologies:
Bars of pressure.
This is the amount of pressure used to make the shot of espresso. .
The standard commercial espresso pressure is 9 bars, roughly 130 PSI. Most lower-cost machines extract at 15 bars, almost 220 PSI.

Pressured or Pressurized baskets and Standard baskets.
Standard espresso filter baskets are full of holes, pressurized baskets just have one small hole which the espresso is forced through at high pressure.
With pressured baskets, the shot will look the part regardless of how well extracted the shot is, as the process produces crema, but it’s produced by the pressure in the basket and not as a side-effect of well extracted espresso, as it would be with standard baskets.
So in a nutshell, you can cheat to a certain degree with a pressured basket, allowing you to get away with using pre-ground coffee or a grinder which isn’t up to espresso, but you’re never going to have the same potential for great shots that you would have if you used standard baskets, with a capable grinder and some home barista skills.

Channeling.
This is where the water finds channels through the puck of coffee in the basket which it can flow through quicker, leading to uneven extraction and poor tasting espresso. Using a bottomless portafilter can help here as it’s quite easy to see channeling, jets of water coming out of the filter in all directions & multiple streams of espresso.
Preinfusion.
This is where water is introduced to the puck of coffee in the basket, usually at low pressure, before the pressure is ramped up. The puck being soaked first before it’s hit with higher pressure can help to reduce the chance of channeling.
Panarello.
This is a sheath fitted over the steam pipe which delivers the steam into the milk via a hole on the side, so that anyone can froth milk – as using a pro steam wand isn’t as easy as it looks, there’s a knack to it. The issue with panarello wands is that they’re usually only capable of stiff foam for more traditional foamy cappuccino. Ovbiously this isn’t an issue if this is the kind of foam you like. But as I said in the video, with the Dedica EC685 (not true of the earlier model the EC680) the panarello is actually capable of really good steam texture! See: https://youtu.be/ls4KTxPR9GU?t=807
