Also known as whipped coffee in places like India, Pakistan and Macau, the coffee was given its nickname in Korea because of how much it tastes like the retro toffee-like candy dalgona. As people in South Korea are encouraged to stay home to protect themselves from the coronavirus, the recipe has gone viral on Instagram and YouTube. Read more about it in my article for LA Times Food here: https://www.latimes.com/food/story/2020-03-13/dalgona-iced-coffee-south-korea-isolation

Dalgona coffee
Makes 1 drink

2 tbsp instant coffee (I used Folger’s)
2 tbsp sugar
2 tbsp hot water
1 cup milk

Combine instant coffee, sugar, and hot water in a small mixing bowl.
Using a hand mixer, beat the mixture for 3 to 5 minutes, or until the color changes to golden brown and the mixture takes on a thick consistency.
Pour the milk into a tall glass and top with the mixture, using a spatula to coax it out of the bowl. Stir and enjoy!
