Creamy Chicken and Spinach Pasta is a video with step by step instructions for making this amazing dish with left over rotisserie chicken.
Ingredients:
2 cups cooked rotisserie chicken, shredded
8 oz egg noodles or linguine
2 to 3 cups fresh spinach (I prefer 3 cups)
¼ cup sun-dried tomatoes, chopped
1 tsp minced garlic
1 cup heavy cream
½ cup grated Parmesan cheese
1 tbsp olive oil
½ tsp red pepper flakes (optional)
Salt and pepper to taste
Instructions:
Cook pasta according to package instructions.
Reserve ½ cup pasta water before draining.
In a large skillet, heat olive oil over medium heat. Sauté garlic and sun-dried tomatoes for 1–2 minutes.
Heat leftover chicken for 42 seconds in the microwave with a damp paper towel covering the chicken.
Add pasta water, chicken, and spinach.
Cook until spinach wilts. I put the lid over the pan for this process. Stir occasionally.
Pour in heavy cream and stir in Parmesan cheese. Simmer until sauce thickens.
Toss pasta into the sauce, season with salt, pepper, and red pepper flakes. Serve warm.
*You could add mushrooms if you like.
