scrambled eggs actually get watery not from the milk, but from the salt.
Try adding the salt after cooking the eggs. Love your videos!

Oh wow, I found the one thing I can do better on an espresso machine than
Gail! Gail, try a few changes. First, I’d drop the milk completely, though
that is just preference. The eggs will come out perfect even with nothing
added at all. Go hot and fast with the wand, you actually wound up with
water because you were ‘long’, if you use milk don’t use 2%. Big boy
machines like that can do 2 or 3 eggs, Silvias can handle 2, and a Via
Venezia can handle one. As you noted, purge the wand!

experiment? I would love to do this on a regular basis with my machine, but
I do not want egg residue to affect the quality of my milk-based drinks.

I guess that’s a poached egg. The problem being it’s too hot (destroying
any nutritional value in the milk or eggs, leaving only fat, cholesterol
and calories) but it’s probably “less bad” than a microwave to cook an egg.

Did you think of trying poached eggs? I dunno if it will work but putting a
egg in unbeaten maybe a tiny bit of hot water for the bottom then use steam
to cook it and hopefully it would turn into something like a poached egg?

None – as long as you take care to run a lot of steam out of the wand and
wipe it down thoroughly, you should be fine. You could also take off the
tip of the wand to clean it if you have any concern, but we didn’t see any
issues. – Kat

@SeattleCoffeeGear xias99 is right with the salt… I saw this explained
recently and it’s to do with the salt breaking down egg proteins before
cooking – so it’s always good to add the salt after, I always do this now.

In South Korea, part of breakfast is a cup of coffee and quail eggs
floating on top. Which is stirred and coffee spooned over them until cooked
then simply swallowed with a sip. This is while normal drinking of the
coffee. Just adding another culture try it and you might show this in your
video. Should be a smaller egg. One expresso cup. No salt and pepper? Don’t
know not too much.

is a bit wetter on a smaller machine like that so you might find you have
more moisture in your eggs 🙂 – Kat

i dont have a espresso machine yet, getting one for xmas off my brother tho
(i picked it) but doubt id try it as will be a newb at using it and wouldnt
wana break it. I went with a cookworks espresso coffee machine (argos in uk
for £32 from £69) tho doubt uve seen it before unless u see the vid on
utube for it. Hope its a decent machine tho as it has loads of good reviews.
