There is a max temperature, though I find that 150 is the absolute maximum.
But personally, I like to stop after the steam seems to feel thick coming
out of the pitcher.

He doesn’t even explain how hot to get it… Or the fact that if you leave
the steam wand just below the surface of the milk you will end up with much
more foam, as in the case of a cappuccino (versus a latte, which you want
to have very little foam for). You should steam your milk until the pitcher
is hot enough that you feel it will burn you–I like to leave mine for
about ten seconds past that so that the milk is extra hot so the beverage
doesn’t get cold too fast.

Use a temptag, if you go past then you destroy the proteins in the milk,
and your coffee will taste like a bad cacoa with a lot of milk. On a pro
machine you can not go 10 sec past, as all the milk will be spilled with
huge bubbles, the protein in the milk will be destroyed and milk will taste
like egg…
