This is another one of my vintage finds, where I used it to extract espresso and froth milk for latte art.

Once you start to get coffee dripping out of the outlet, try closing the
outlet and waiting a few more minutes. You will find the sweet spot with
trial and error if you do not have the model with the pressure meter. It
does have a release valve if you over pressure it.

That will give you better pressure and a fuller, richer coffee.

I measured with a ppm digital meter (parts per million) the coffee from two
Bialenttis, the coffee before the sugar. Bialentti 4 cups (2oz.) 1560,
Bialentti 2 cups 1300. The Bellman with the 3 cups reducer 1650!
Gaskets must seal well. Open steam to full and milk frothing should take
less than a minute.
Also noticed that the coffee from the Bellman is less bitter!

I purchased the unit that you demonstrated. I have not used it yet. I first
wanted to see it in action. But yours and mine are known as the CXE-25. You
posted it as CX-25. The E in CXE stands for Electric since other versions
are placed on a burner to produce heat. Just FYI! Thanks for the video, I
enjoyed it. And where is your cafe located?

I believe there is only one size but it can make 3, 6, or 9 cups.

This is actually a CXE25 which is an electric version, so you plug it in. I
have a coffee shop and use a Nuova Simonelli Aurelia 3-group espresso
machine where I actually make my espresso based drinks
