Recipe –
For the Coffee Brittle…
220g caster sugar
60ml water
15g cold butter
small handful of chopped espresso beans

For the Coffee Caramel…
210g double cream
1.5 tbsp instant coffee powder
1/2 tsp vanilla extract
180g caster sugar
110ml water

For the sponge…
125g caster sugar
125g self raising flour
1/4 tsp bicarbonate of soda
125g soft unsalted butter
2 large eggs
1.5 tbsp very strong espresso

For the buttercream
200g soft unsalted butter
320g icing sugar, sifted
1/2 batch of coffee caramel

I just made cupcakes very close to these by modifying one of your previous recipes! I had a little more cocoa in the cupcake part, used dulce de leche as the filling, and a mascarpone cheese/whipped cream frosting.
